It was another great day on the dock! I don’t like having the same thing twice in a row, so here’s a new trout recipe. Delicious, healthy, quick and virtually no clean up.
For each serving you’ll need
Foil
Cleaned trout ( 2 filet pieces)
Spinach
2t minced garlic
3T chopped tomato
3T chopped onion
Lemon slices
Lemon juice
1T or so butter, cut into 3 pats
Salt & pepper
Tony Legner’s Cat 5 food polish if you want a little kick to it
Spread minced garlic on one side of filet, placed skin side down on foil. Salt & pepper to taste. Cat 5 if desired.
Layer spinach, butter, onion, tomato, lemon, and a squeeze of lemon juice. Top with remaining filet. Make a loose packet with the foil, seal securely. Place packet on cookie sheet and place into a preheated 400 degree oven. Cook for about 10 minutes, until fish flakes easily.
