Chipotle Ribs

Here is a recipe for some really easy, really scrumptious ribs. You can use either beef ( shown here) or pork ribs. Baby back are exceptionally good, but this works for any type, even short ribs. The secret is in the sauce, SO good!
For ribs
Preheat oven to 400
7-8 lbs ribs
2 onions, sliced
Seasoned salt
Pepper
About 1/4-1/2 c apple cider vinegar, or wine vinegar.
Place ribs in big roasting pan.
Pour vinegar over ribs. Sprinkle with seasoned salt and pepper. Cover ribs with sliced onion. Cover tightly with foil,place in preheated oven for about 2 hours. Every so often, baste.
For sauce
1 32 or more oz. smokey BBQ sauce. I generally use Masterpiece smokey.
1-2 t Liquid smoke
Chipotle chili peppers in adobo sauce, diced small
1-2 t of the adobo sauce
6 t lime juice
1-2 T minced garlic
Mix all together
After ribs have cooked for two hours, drain them.
Baste thoroughly with BBQ sauce. Tightly cover, reduce temperature to 325. Check often to put more sauce on and cook for about 30 more minutes.
