Caprese Salad

This is the epitome of fresh light  flavors in either a sandwich or salad. This makes a beautiful light lunch, or a perfect salad along with lunch or dinner. You can whip it up in a jiffy, and it’s best if you have fresh vine ripe tomatoes and home grown basil. If you make your own cheese, more power to you! I’d like to learn how… email me!
You’ll need:
Soft mozzarella cheese ball, sliced

Basil ( gourmet garden works well too)

fresh tomatoes, sliced

Balsamic vinegar

olive oil

Layer tomato slice, cheese slice, and top with basil leaf.  Drizzle olive oil, then balsamic vinegar atop. Serve as a salad or place on a nice crusty french baguette sliced in half  lengthwise for a sandwich. Perfect with a nice glass of wine.
