A delicious, quick and easy appetizer. My Mom made this quite often and I always requested this for my birthday dinner… along with crab legs (no, one can never have enough crab!) and Angel Food cake with whipped cream and pineapple or strawberries for dessert. Ok, back to the dip!
You’ll need
Crabmeat If you have canned, use the best quality you can find and use at least 2 cans
Hellman’s mayonnaise about a heaping Tablespoon
Horseradish to taste
Heinz Chili Sauce About 1/2 a bottle.
Lemon wedges
In a small bowl, mix chili sauce, mayonnaise, horseradish and a squeeze of lemon. It should be a deep rose color, not too pink. Taste and adjust the ingredients to your preferences. The horseradish can really kick it up a few notches. When you get the dressing how you like it, place crabmeat in a separate bowl. Add dressing a bit at a time and mix gently to leave clumps of crab if possible. The consistency should be somewhat creamy, but not too liquid. You may not use all of the dressing. You should be able to use a small fork to serve on crackers. Place in a pretty bowl and garnish with parsley and a twist of lemon. Ritz crackers are a good choice for this dip, as are water crackers, pita chips.
