Sister visit! While visiting my sister in upstate NY, she made us so many fabulous meals it’s hard to keep up. This was one dessert she made that she gave me the recipe for. It’s FABULOUS! Great for dessert and we had it for breakfast too. Try it, it’s soooo good. You can use any berry. Pears, as well as peaches would work well too.
Here’s what you’ll need:
6 oz. (1 1/3 c.) flour
1 t. baking powder
1/4 t. baking soda
1/4 t. salt
6 T. (3 oz) sweet butter, rm. temp.
1 c. sugar
2 large eggs
1 1/2 t. grated orange zest
1/2 t. vanilla
2/3 c. plain yogurt
Topping:
1/2 large ripe peach, sliced 1/16″ thick (3 3/4 oz)
3/4 c. raspberries (3 3/4 oz.)
1 T. sugar
1 T. flour
Position rack in center of 350 degree oven. Lightly butter a 9 x 2 round pan. line bottom with parchment, lightly flour sides and tap out excess.
In medium bowl, whisk the flour, powder, soda and salt to blend. In stand mixer with paddle, beat the butter and sugar on med-hi until well blended and fluffy, about 3 minutes. Add the eggs, one at a time, beating on med. until just blended, and adding the orange zest and vanilla with the second egg. using a wide rubber spatula, fold in half the dry ingredients, then the yogurt, and then remaining dry. Scrape the batter into the pan, spread evenly. Bake 15 minutes.
Meanwhile, make topping. combine peach slices, raspberries, sugar and flour in a small bowl. Using a fork, mix the ingredients to evenly coat the fruit and lightly crush the berries. After the cake has baked 15 minutes, slide the oven rack out and scatter the fruit evenly over the top of the cake, working quickly. Continue baking until a toothpick inserted in the center comes out clean, another 25-30 minutes.
Let cake cook on a rack 15 minutes. Run a knife around circumference to loosen cake. Using a dry dishtowel to protect hands, lay a rack on top of cake, invert. Peel away parchment, set a flat plate on top and reverse. Serve warm or room temperature.
Wrap in plastic and store up to 5 day at room temperature. ( it wont last that long in rhe house!) Good for picnics, breakfast, dessert
