If you need to pound your chicken breast to make them thinner, it can be a mess! I like to put a sheet of plastic wrap on a cutting board and place the chicken on half of it. Fold the other half of the plastic wrap over and pound away. It also works great if you use a large plastic bag. Don’t seal the back completely, because it will pop and spray chicken “stuff” all over the place. This keeps your cutting board cleaner, the pounder cleaner, everything cleaner. This doesn’t eliminate the need to thoroughly clean everything in the area to avoid cross contamination, but it does reduce the contamination zonethat the pounding can create.
