Roasted Asparagus

The roasting of vegetables enhance and intensifies their flavor, and a great example is fresh asparagus. Roasting asparagus also allows it to keep the beautiful green color & it doesn’t wash out with boiling or steaming.
You’ll need;
Asparagus
Olive oil
Salt & pepper
If you’d like, adding minced garlic is an option also.

Preheat your oven to 450 degrees. Wash and pat the asparagus dry.
Lightly oil a cookie sheet or place a Silpat silicon sheet in a cookie sheet.
Place asparagus on pan, lightly drizzle olive oil on asparagus. If using garlic, add about a teaspoon to 1 1/2 t minced garlic, toss gently to evenly cover asparagus with oil & optional garlic. Place in hot oven. After about 5 minutes, mix & turn and roast another 3-5 minutes or until it reaches your preferred doneness. I like it a little browned, but still firm, which takes about 7-10 minutes total. Remove from oven, sprinkle with kosher salt & freshly ground pepper.
