Salad Nicoise

What’s better on a hot summer day than a nice salad?  This is great for lunch, dinner, whenever you want a satisfying, light, healthy meal.

For 4 servings you’ll need:

1 lb fresh tuna cut into 1″ squares

wooden skewers, soaked in water so they won’t burn

8-12 small red potatoes cut in half

4 hardboiled eggs, peeled and cut in quarters

4 c salad greens

1 c grape tomatoes, halved

1 1/2 c fresh haricots verts (or green beans)

1 c pitted kalamata olives, sliced or halved.. however you like them

salt and pepper

In medium pot, bring water to boil. Add potatoes and boil until fork tender. While waiting for the potatoes, get an ice bath large enough to hold the potatoes and the haricots verts. Cook potatoes for about 10 minutes or until fork tender. Add the haricots verts, and boil about 2 minutes. Drain potatoes and haricots verts, submerge in the ice bath. When cool, drain and set aside.

Divide tuna squares into equal servings. Rub lightly with olive oil, and sprinkle with salt and pepper.  Thread tuna onto skewers. (usually about 3 chunks of tuna per skewer). Either on a grill, or with a tad of oil in a nonstick pan, heat to med high. Place tuna skewers in pan,(grill) and sear on each side. This is very quick, so don’t leave it unattended. Usually no longer than 1-2 minutes, if that long,  per side for med rare. Set aside.

For each serving, place a cup of salad greens on the plate. Arrange potato halves, tomatoes, olives, eggs, on top of greens. Top with tuna skewers and haricots verts, and a lemon wedge. Drizzle dressing over the top or in a ramekin on the side. Serve with crusty bread, breadsticks, or crackers.

Perfect for a hot summer day.

Lavender Lemonade is a nice beverage to serve with this also.

Lavender Lemonade

You can use your own dressing, but if you’d like to make a dressing, this version of honey mustard goes quite nicely. You’ll need:

1/4 c stone ground mustard

1/4 c olive oil

about 4 T  champagne vinegar  or white wine vinegar

about 4 T honey

Mix all ingredients  with a small whisk and serve.
