A tip for adding some extra great shrimp/seafood flavor to soups, stews, fish broth, vegetable broth, actually pretty much any kind of cooking is in the shells. Yup, save those shrimp and lobster shells. If you want extra flavor in your seafood stew, after you peel the shrimp, save the shells. Wrap them up in some cheesecloth, tie it up with string, and drop it in the stew while it’s simmering. It will add extra flavor and save you from burned fingers peeling the shrimp after it’s cooked. Just lift the bundle out and voila. If you use lobster tail, that’s easy to pick out, so no wrapping necessary. Just drop it in. It works for rice dishes also.
