I had such a busy day today! Fun all around, and now it’s time for dinner. What to make? I’m hungry now, and don’t really want a big production, but want something tasty and quick. A crustless quiche is perfect. The tarragon in this recipe adds a really nice flavor. Add a nice salad and I’ll be set.
You’ll need;
7 eggs (egg beaters will work, as will egg whites if you’re so inclined)
1 sliced tomato
1 c fresh baby spinach
olive oil
1 T butter
1 c shredded cheese (parmesan, romano, mozzerella, cheddar, blue,feta… any kind you like)
1 t tarragon
pinch salt & pepper
1T fresh basil chopped, and some leaves for garnish
Heat oven to 400 degrees.
In pie pan or quiche dish, drizzle 1T olive oil and 1T butter. Place in hot oven to melt and combine.
After butter has melted, take pan out of oven and place spinach in butter oil mixture. Mix together to wilt spinach.
Spread spinach out to cover the bottom of the pan.
In medium bowl, mix eggs, cheese, tarragon, basil, salt and pepper. Pour egg mixture over the wilted spinach. Place tomato slices on top of eggs. Top with a sprinkling of cheese, and a sprig of basil. Bake for 30 minutes, or until eggs are browned and fluffy. Serve with a crispy salad and crusty bread.
