Popeye Vegetable Soup

This is actually  more of a Tip than a recipe.

If you want to really  kick up the nutrition and filling power of a ready-made or convenience food, without adding many calories  of crackers or bread, do like Popeye! Add spinach! it packs in a plethora of vitamins and minerals. Spinach is one of the most nutrient rich foods. It is VERY low in calories, for example 2 cups of baby spinach has only 20 calories, zero fat, 2 g of dietary fiber and 3 g carbs. It has vitamin K, C, A, folate, iron, calcium, magnesium, AND potassium.  That’s quite a punch!

BUT there’s also a downside. The USDA has also identified it as one of the top 12 foods contaminated by high pesticide use. SO, STILL eat your spinach, but either buy organic or wash, wash wash!

I kicked up my Progresso Vegetable Low Sodium soup. I added about a cup or so, (large handful) of spinach to my pot of soup, heated up and voila!

A handful on top is all it takes to really pack a punch!

Vegetable soup Popeye would be happy to eat.
