Crab and Corn Chowder

It’s been a loooong time since posting anything, but lying here (at 3:33 am) I’ve decided to post tonight’s delicious dinner. I’ll add a photo a bit later.
This is a simple, hearty chowder, serve with some warmed crusty bread for a satisfying meal on a cold ( or warm for that matter) night. Make a big pot & invite the family or some friends over. The leftovers are even better the next day.
You’ll need:
1 large chopped onion
8-10 slices thick bacon, cooked, coarsely chopped, save 2-3 T of the grease
1 lb red potatoes, diced, skin on (sweet potatoes are good too)
1 lb frozen corn kernels
3 c clam juice or broth
4 c half and half ( fat free is a great alternative)
1 1/2 lb crab meat. I use a mixture of lump crab, claw meat, and jumbo lump, but any crabmeat will be great.
1-2 T Fresh thyme leaves or 1 t dried
Over medium heat place reserved bacon fat in large soup pot. When hot, add chopped onion. Cook until lightly browned. Add potatoes, stir, cook for a couple minutes to soften a tad, add broth. Turn heat to high until boiling, cover, reduce heat to med low, simmer 10 minutes until potatoes are fork tender. Add corn, half and half, thyme, crab meat, 1/4 of chopped bacon, stir to blend. Simmer 10 minutes over medium low, don’t boil.
Serve in bowls, sprinkle remaining bacon atop each serving, enjoy with crusty bread.
