Does this look like a frozen pizza? Well, it is, and it isn’t! I like to keep a frozen pizza in the freezer for a quick “emergency” situation.
If I don’t have time to make dough, and want convenience, pumping up a pizza will do the trick.
We went out for a long, late lunch today, and when dinner time came, we just wanted a really nice salad, but a little more than that too. So, head to the freezer.
I usually have lots of fresh veggies in the fridge, and that’s the perfect way to both add nutrition and flavor to a “fast food”.
Tonight, on our spinach and mushroom frozen pizza,
I added fresh basil, broccoli, squash, zucchini, onion, cherry tomatoes, shredded provolone, orange bell pepper. For a little extra flavor, a light spray of Tuscan Herbed olive oil from our fabulous local olive oil shop, The Bodacious Olive , tops it off.
Bake it a tad longer than the box directs, until the cheese melts and the crust is golden and crispy. It’s like having a homemade pizza in a jiffy. Almost.
Add a delicious fresh salad and you have a fast, healthy light dinner. Tonight we ate on the deck, watching Hank Heron (our resident Great Blue Heron) and the seagulls. Doesn’t get better than that!

This is such a good idea, I can’t believe I have never thought of it before. That looks so much better than frozen pizza, but its still so easy!
