Daily Dinner Table

Ideas for dinner tonight. Household and kitchen tips, recipes, tweaks. What's worked great, and not so great.

I DO know Jack Dip

Need something to bring to an impromptu party? Friends dropping by unexpectedly? Here is a great snack/ dip you can whip up in 5 minutes, tastes great and (aside from the chips to dip with) is good for you. It tastes best if you can chill it for a while, but even if you don’t have time to chill- it’s still great.
I usually make a pretty big batch, put 1/2 out for the gathering, & try to save the other for us to eat another time, but it seems that I always bring out the other 1/2! It’s just that good!
You’ll need:
2 small cans chopped green chilies, undrained
2 small cans chopped black olives
1 bunch scallions ( green onions) chopped. I use the white parts & up the stalk almost to the dark green. It’s up to you though.
About 6-8 plum tomatoes, diced. Or 3-4 beefsteak. I’d guess its somewhere close to a cup of diced tomatoes, whichever kind you like or have on hand.
1/8- 1/4 c or so chopped fresh cilantro
Approximately 1- 1 1/2 c shredded Monterrey Jack or pepper jack cheese.
Almost a whole small bottle of Kraft Fat free Zesty Italian salad dressing.
Mix it all together, cover- chill if you have time, serve with chips, celery or whatever you like to dip with. It’s also great as a bruschetta.
