What you have in the fridge shrimp

We went to my brother & sister in laws home for a lovely Memorial Day lunch & visit with my sweet niece & her family today. Oh shoot! I should have taken a photo of the appetizer I brought… it was a goodie- so they said. I’ll post that later. Anyway, we were pretty full from the amazing grilling my nephew provided, & deeeelish berry trifle my Sis in law made, so a light dinner was in order. Of course, nothing was planned, so I had to figure something that I just had in the fridge. I had some left over Jasmine rice, pretty good bit of veggies, & shrimp in the freezer. Shrimp thaws fast- here we go!

Ingredients
Quick to cook!

Ingredients for 2 servings

1/2 T minced garlic

2 T minced onion

1/4 c cherry tomatoes, halved

1/2 c diced (any color pepper) yellow is shown

1c spinach, roughly chopped

Olive oil

Cooked rice

2T butter

8- 12 large shrimp

Shaved Parmesan cheese

Lemon

Chopped parsley

TO PREPARE

Warm up the cooked rice, or cook fresh according to directions. In separate pan, heat 1T olive oil in skillet over medium heat, add garlic & onion. When fragrant, about 2 minutes, add peppers & tomatoes. Cook until softened. Add spinach, cook until wilted, set aside and keep warm. Heat an oiled grill pan over med high heat, add shrimp, squeeze lemon over shrimp. Cook 2 minutes on each side.

Place warmed rice in bowl, add veggies. Top with shrimp. Garnish with Parmesan & parsley, drizzle good quality olive oil on top.
